We recently jumped on the acai bowl bandwagon and aren’t turning back anytime soon. If you have yet to try an acai bowl, it’s basically a smoothie in a bowl that’s just a little bit more substantial (and Insta-worthy ;)). It’s the perfect breakfast or mid-afternoon snack, and the best part is, it takes 10 minutes to make (including cleanup). Our go-to recipe is below!
Ingredients (Serves 2)
For the bowl…
- 1 frozen acai pack (Whole Foods has a bunch of these!)
- 1 banana
- 1/4 cup almond milk
- 1/2 cup blueberries
- 1 tablespoon honey
- You can also add a scoop of almond butter!
Toppings…
- Strawberries
- Blueberries
- Chia seeds
- Granola
- You can also add another banana (sliced), pomegranate seeds, almonds, etc.
Directions:
Run your frozen acai pack under warm water and start to break it up into small chunks. Cut off the top, and pour it into the blender. Add your banana, blueberries, honey, and almond milk and blend until it’s the consistency of a smoothie (you can add ice if it’s not thick enough). Pour the mixture into 2 bowls, and top with the remainder of your ingredients – strawberries, blueberries, chia seeds, and granola!
