If you’ve already purchased one of the swimsuits from our Honeymoon Suit post earlier this week, do not worry. This recipe is totally healthy and will not put your healthy eating regime in jeopardy! After seeing some amazing pasta recipes on Pinterest over the past few weeks, we decided that a super healthy option had to be made. Pronto. So we gathered our best grape tomatoes, fresh spinach, and organic brown rice pasta and created one of our favorite dinners – ever.
Heat the olive oil and garlic on medium until it starts to sizzle, then toss in the quartered tomatoes and basil leaves, turn the temp to LOW at this point. Cook this for about 15 minutes or until the pasta is ready.
Then, add the pasta and spinach to the tomatoes.
Don’t forget the cheese (and wine)
SPINACH + TOMATO PASTA RECIPE
(serves 4)

prep + cook time: 40 mintues
INGREDIENTS:
- 3 TBSP olive oil
- 4 cloves garlic, minced
- 3 basil leaves, chopped
- Sea salt (just a shake or two)
- Pepper (just a shake or two to taste)
- 10 grape tomatoes, quartered
- 2 cups fresh spinach
- 8 oz. organic brown rice pasta (Mine is front Trader Joe’s and it is SO good)
- 4 oz. fresh mozzarella cheese, chopped
Bring 4 quarts of water to a boil (and follow package instructions for cooking the pasta)
Chop garlic, basil leaves, and tomatoes. Heat olive oil and garlic on Medium heat until it starts to sizzle. Then, add tomatoes and season with a shake of salt & pepper and lower the heat. Let cook for about 15 minutes (I let mine cook for as long as the pasta took to cook).
Strain the pasta and rinse in cold water. Add all of the pasta and your spinach to the tomatoes. Stir every couple of minutes until the spinach is wilted. Add another pinch of salt and then add your fresh moz!
Serve and enjoy!
